Banana cupcakes with banana buttercream frosting

Banana Buttercream Frosting, made from scratch, using a fresh banana & banana extract, for the ultimate banana flavor! If you need a banana buttercream frosting, this is the frosting for you! This frosting would be great on đứng đầu of yellow cupcakes, vanilla cupcakes, chocolate cupcakes, peanut butter cupcakes & so many other cupcake flavors!

The key to this frosting is one banana. Ripe, but not over ripe. Don’t use a brown banana like we would in banana bread! và I love this frosting because we use COLD butter. No waiting around for the butter to lớn come khổng lồ that perfect room temperature.

Ingredients

1-1/2 cups unsalted butter, cold and cut into cubes1 ripe banana, mashed1-1/2 teaspoons banana extract6-7 cups powdered sugar, divided1/2 teaspoon lemon juice1 teaspoon vanilla extract (I used Vain Madagascar Vanilla Extracted in Cane Rum)2 tablespoons heavy whipping cream

In the bowl of a stand mixer, affixed with the paddle attachment, add the cubed butter into the bowl. Mix on medium-high tốc độ for 7-minutes, scraping down the sides of the bowl as needed.


Change the mixer speed khổng lồ low and add the mashed banana, and two cups of powdered sugar. Mix on low until incorporated. địa chỉ cửa hàng one teaspoon of banana extract and one teaspoon of vanilla extract into the mixture & mix until combined.

Add the last 2 cups of powdered sugar, the heavy whipping cream, the lemon juice and the một nửa teaspoon of banana extract lớn the mixer. Beat on low until all ingredients are incorporated. Increase the tốc độ of the mixer to lớn medium-high speed & beat the frosting for 5-minutes.


Notes

This frosting is a little softer than the other frostings I usually pipe. You can add another cup of powdered sugar khổng lồ your frosting, if you want a firmer texture. I piped the frosting and it held its swirl just fine, but if you are using a more intricate piping tip, you might want the texture a little firmer.
