With the weather warming up I started making frozen treats again. The process for making the strawberry elderflower semifreddo is really easy. For the first layer, whip heavy cream until soft peaks form. In a high speed blender, puree strawberry with elderflower cordial. Fold half of the whipped cream into the strained strawberry puree.

For the second layer, make a custard. In a bowl over simmering water, whisk egg yolks and sugar until pale and tripled in volume. Remove from heat and cool it over an ice bath. Fold in the remaining whipped cream.

In a container lined with plastic wrap, pour the egg custard mixture in first. Gently pour in the strawberry mixture over the egg layer. It"s ok for the two layers to lớn mix. Place the container in the freezer a minimum of 8 hours. Twenty four hours would be ideal for the flavors to develop.
