I enjoy Chinese biscuits with mung bean filling và I was excited khổng lồ find a recipe for Mooncake with a mung bean filling. I got the inspiration fromhere. The Taiwanese Mung Bean Mooncake is usually stuffed with pork and mung bean. I omitted pork from my recipe và made it meatless as I knew I would be the one eating this mostly. My hubby & in-laws prefer the Five Nuts Mooncake.

Wash and soak mung beans in water for at least 4 hours or overnight. Drain well and steam at medium heat for 40 minutes till soft.In the meantime, fry the shallots with oil till fragrant and golden brown. Remove from wok & crash the fried shallot with spoon or hand. Note: I did not stir fry as my steamed mung beans are very dried. If steamed water went in và made your mung beans very wet, then you need khổng lồ stir fry at low heat till dry and you able to make shape into a ball.

In your baking instructions it says lớn bake at 190c for 5 mins then lớn reduce the heat to 190c and continue baking?
